WHAT IS TEQUILA AND HOW IS IT MADE?
It is a liquor distilled from the
heart of a blue agave plant. It can only be produced in Mexico. Ordinary tequila (well
tequilas) must be made with at least 51% blue agave juices and may be exported in bulk to
be bottled in other countries. The quality tequilas are made from 100% blue agave juices
and must be bottled at the distillery in Mexico.
The process of making tequila begins when a blue agave plant is ripe, generally around 12
years after it is planted. The leaves are chopped away by the "Jimador" who must
assess when the plant is ripe. The core of the plant, or the "pina" weighs on an
average of 40 to 80 pounds. the pinas are taken to the distillery where they are chopped
up and roasted. The starches turn to sugar as the pinas are roasted. They are shredded or
crushed to produce their juices, which are put into the vats, and yeast is added to aid in
the fermentation process. The yeast acts upon the sugars of the plant converting them into
alcohol. They are distilled twice, and the second produces the clear liquid we call
TEQUILA. |

ABOUT OUR "MARGARITA ORIGINAL"
The
origins of margaritas have been written about extensively,
and they all come down to one thing... no one knows for
sure. Most lore says the drink was either invented in
Tijuana by Danny Herrera in the late Thirties, in Ciudad
Juarez by Pancho Morales in 1942, in Acapulco by Texan
Margarita Sames in 1948, or in Puebla by Danny Negrete in
1936. The original margarita was far more potent than the
average "house" margarita is now. The original follows a
recipe of 1 part fresh lime juice, 2 parts Citronage
(Mexico's version of Cointreau) and 4 parts Cuervo
Tradicional 100% Agave Silver tequila, putting a Reposado or
Anejo tequila in a margarita is analogous to using
tenderloin for hamburger. Orange liqueur and lime juice
destroy the mellow flavors of Reposado and Anejo tequilas.
Margaritas need bright, clean fresh silver tequilas.
