History
of
Seminara's Restaurant |
The restaurant was named Seminara's as a tribute to David's
mother and grandfather from whom he inherited his love and respect for good food and the
philosophy that nothing was too good for his family, and friends. A tradition of striving
for excellence passed on from father to daughter to grandson. David and his wife Vicki
have personalized that philosophy to include their customers.
David's grandfather Francesco and grandmother Giuseppa emigrated from Sicily via Tunis,
North Africa, where his mother Leda was born. They brought with them a heritage of
traditional Sicilian cooking spiced with a touch of the Middle Eastern cuisine.
In this family, traditional roles were reversed. It was Francesco who did the shopping and
cooking. He liked nothing more than to create delicious multi-course meal for holidays and
friendly gatherings. Led a remembers
helping her father from an early age because he would not allow his wife in the kitchen.
She was very meticulous about maintaining a spotless house and would complain about all
the pots and pans and mess that such feasts entailed.
A typical feast might start with an antipasto of caponata, marinated olives, sweet roasted
red peppers, salami and mortadella, 'real' vine ripe tomatoes layered with mozzarella and
dressed with home-made pesto. Leda still makes the best pesto around. Then came a pasta
dish- baked ziti layered with fried eggplant, tomato
sauce and shredded mozzarella in
honor of St. Joseph's Day - Pasta con Sarde - buccatini pasta with a sauce of fennel tops and dill, fresh
sardines, raisins and pine nuts - an unbelievable experience. On to the meat or fish with
vegetables of course. This was followed by a break to clear the table and wash the dishes
and open more wine in preparation for Francesco's signature dish - Rock Lobster tails -
split, topped with diced tomatoes, parsley, a drizzle of extra-virgin olive oil and then
broiled to perfection. And let's not forget the artichokes (which we often did until
somebody checked the pots in the kitchen) to aid the digestions of course. There is
nothing sweeter on the tongue than a bite of artichoke followed by a sip of wine - food
for the gods. No meal is complete without dessert - cannoli or sfogliatelli or a Sicilian
Cassata with it's rum soaked cake layered with a mix of ricotta and candied fruits.
In these health conscious days, meals like this are rare but David hopes to bring his
diners some of the dishes that were the highlights of these feasts. |
