Restaurateur Ignacio Blanco and Executive Chef Luis
Bollo remain ahead of the curve with their contemporary,
sophisticated Spanish Cuisine.

Ibiza, (named after an island off the
coast of Spain), the duo's New Haven based eatery, has
also undergone a few changes. Formerly known as Pika
Tapas, Ibiza breaks away from the more mainstream
"tapas" image that is typically associated with Nuevo
Latino style food. While the menus at both restaurants
are filled with small tasting and approprialtey shared
plates, the dishes themselves are more sophisticated,
reflecting the ingredients from Chef Bollo's Basque
roots and culinary experiences throughout Spain.
