TEQUILA |
|
Tequila is a distilled spirit that comes from
the "Agave" plant, which has been found to grow primarily in the Town of
Tequila, Province of Jalisco. There are more than 400 different varieties of Agave
plant, but tequila can only be distilled from blue agave. Tequila must be produced in
Mexico, but more specifically, it can only be produced in one of five areas in the state of
Jalisco. |

So, the type of agave that can be legally used is limited by both species and
geography. The agave plant, which resembles a large pineapple, takes 8-10 years to mature
before it can be harvested to make tequila. |

Agave content - Some Tequilas are called
"100 percent agave" and all others are "mixed". These
"mixed" Tequilas are any brand of Tequila with an agave content of at least 51%
with the balance being made up of cane sugar or molasses added during the fermentation
process. 100% Agave Tequilas are generally referred to as "Premium", with some
aged Tequilas being referred to as "Super Premium". |

Aging
- Tequilas can range in age anywhere from one day to several years. When it comes to
aged Tequilas, the taste can have a vanilla to smoky taste. A "super-deluxe"
Tequila is denoted by the type and quality of wood used for aging. Some premium producers
are now using barrels that have been used to age fine French Cognac and wine from France |
TEQUILA TYPES |
White
/ Silver - Tequila in its purest form. Storage time after being
distilled is very brief
with the Tequila being clear.
It can be either 100% agave or mixed. This type of
tequila is best used for margaritas.
Reposado - Means "rested" by law and
must be aged in wood for at least 60 days to 1 year. The oak barrel aging deepens the
aroma and taste while changing the appearance to a light straw color. As a result, these
Tequilas are more "mellow" than the whites and can be either 100% agave or
mixed.
Anejo - Translated means "Aged". This
type must be aged for a minimum of one year and in government-sealed barrels no larger
than 600 liters. The tequila is aged in either French or American oak barrels and should
be enjoyed like a fine brandy. Anejo's develop a flavor with characteristics of smoke, vanilla
and sherry depending on the quality of agave, types of barrels used and depth of the char.

much substantially longer periods of time |
The
Worm
You will never find a worm in a legitimate bottle of Tequila. The
confusion here is with Mezcal, tequilas forerunner. Mezcal is a distilled spirit
made in areas not designated for Tequila and from varieties of Agave other than the Blue
Agave variety. Mezcal differs from Tequila not only in the way its produced, but in
the way it tastes. While most Mezcals are "wormless", there are still some
brands out there that include it in their bottling. Legend has it that the worm, which
lives inside the agave plant, inherits the plants magical spirit and carries it to the
bottle of Mezcal. |

From time to time we also have fruit-infused tequila which is steeped with 4 different
fruits and Grand Marnier.
