Private Chef Service At Your Home

Think of this as your own personalized in-home cooking service. On a scheduled cook date, your personal chef shops for groceries, arrives at your home with cooking equipment in-hand, and prepares several entrees with side dishes, that have been customized to your specific tastes, special diet, and eating goals.

There is a misconception that a personal chef service is only for the rich. Most of our clients are busy professionals, new moms, career-oriented singles, working couples, college students, individuals with special dietary needs, or anyone else who, for any reason, feels hiring a personal chef service might enhance their life. RECIPE OF THE MONTH

Mushroom & Stilton Tart
For the pastry:
11/4 c all purpose flour
1/4 tsp salt
1/2 c unsalted butter cut in pieces
1/4 c sour cream
2 tsp fresh lemon juice
1/4 c (2 FL oz) ice water
2 Tbls coarse cornmeal filling

1/4 oz (7 grams) dried wild mushrooms chanterelles, shitake
1 c (8 fl oz) boiling water
2  Tbls unsalted butter
3/4 c (2 oz) sliced green onions
2 cloves garlic
1/2 tsp fine chopped fresh rosemary
1/2 tsp fine chop thyme
1/2 LB assorted fresh wild mushrooms - chanterelles, porcini, shiitakes,
Brushed clean thinly sliced
1/2 fresh button mushrooms, cleaned, sliced
5-6 oz stilton or other quality blue cheese

Pastry, combine flour and salt in a bowl, butter in another smaller bowl. Place
both in the freezer for 1 hour. Remove, make well in center of flour/salt bowl.
add the butter cutting in with a pastry cutter, until it looks like a course
meal. Make a second well, and in another small bowl, whisk together sour cream,
lemon juice and water; add 1/2 of this mix to the well. With fingertips, mix
this liquid into the coarse mixture. Break up large lumps, and add rest of
liquid mixture, Shape into ball, do not overwork, wrap in plastic and
refrigerate for 1 hour. This seem elaborate but it goes quickly and makes a
wonderful crust.

Meanwhile, make the filling. place dried mushrooms in small bowl and add boiling
water. Let stand 30 minutes, when soft drain, the mince finely. Preheat oven to to
400 degrees. In as large frying pan as you own, melt the butter over medium heat.
Add the green onions, sauté, stirring occasionally, until soft, about 5 minutes.
Add the garlic, rosemary, and thyme and continue to cook, stirring, 1 minute.
Raise the heat to high add, add the fresh and hydrated mushrooms and sauté until
tender and liquid they released has evaporated, 8-10 minutes. Transfer to plate,
let cool.

On a floured surface, roll out dough into 12" round. I sprinkle a bit of coarse
cornmeal on both sides of flat circle then transfer to ungreased baking sheet.
Crumble blue cheese into a large bowl, the add mushrooms and stir well. Spread
mixture over dough, leaving 1 1/2"  boarder at edge of circle. Fold this boarder
back over mushroom cheese mix, so there is a pleated rustic edge. The center of
the galette will be open.

Bake until golden brown, 30-40 minutes. Remove from oven, let stand 5 minutes,
then slide it onto serving plate. Serve hot, warm or room temperature, serves 6.
