The Bistro was originally opened in December 1998 by Billy Auer
and Jeb Swift. Later in 2002, Executive Chef Kender Urena and
his wife Roe joined Billy and Jeb and became their partners.
Billy wanted to create a feeling of “being
in France” in New Canaan and many of the decorating ideas for
this charming little bistro spawned from his travels to France
in the summer. The warm, cozy but, very unique interior décor
makes customers feel like they are entering a comfortable living
room when they enter the Bistro. The white table clothes,
lovely tableware, small floral arrangements, and earthly art
works makes you feel at home and relaxed.
Chef Kender’s training began during his
childhood in Costa Rica, working in his parent’s restaurant. He
graduated at the top of his class from the French Culinary
Institute in New York with a Culinary Arts degree, and also from
the International Bread and Pastry Arts program at the French
Culinary Institute with a second degree in International bread
and pastry arts. In 1995, he came to the United States to pursue
a career. Since arriving, he has held positions at some of New
York’s most well-known establishments, including Le Cirque and
Barbetta. He was taught and worked side by side with such master
chefs as Jacques Pepin, Alain Sailhac, Andre Soltner, Jacques
Torres and Hans Welker.
Bistro Bonne Nuit was chosen by the
American Instuite of Wine and Food to host the conmemorative
dinner for Julia Child. The Institute chose Kender’s Cassoulet
as the dish Julia would have loved. Along with the wines
selected by Roe, it made for a joyous evening.
Chef Kender also has great knowledge of
Italian cuisines working under Genero Villela who opened
Osterial del Circo in New York and Las Vegas and Marc Paulac
from Barbetta. He also has done demonstrations of Italian
cuisine for La Cuccuina and was featured in their magazine.
Kender and Roe loved the town of New Canaan
and decided this was the place to put their skills to work.
Their determination and attention to detail, amongst their great
food and wine, has brought them to “one of the best restaurants
around”. Quotes from the regulars state “I rate every other
restaurant by Kender’s food” and “the consistency at the Bistro
is unbeatable”. Their classy clientele, who will only accept the
best, covers some of the wealthiest of business leaders to a
star studded clientele.
